Organic Strawberry Banana gluten free muffins



I found a recipe online and tweaked it a bit. These turned out amazing and my kids loved them! Not to mention they are gluten free and organic so all around a win-win. They are nice and chewy, not crumbly at all like most gluten free. The zanthan gum really helps this recipe out... DONT LEAVE IT OUT!!

1/2 cup (1 stick) unsalted organic butter melted
2 large organic eggs-lightly beaten
1 tsp organic pure vanilla you can get it here
2 ripe organic bananas smashed
1 cup organic strawberries diced into bite sized pieces
2 1/4 cups all-purpose gluten free flour (get a 2 pack here)
3/4 cup organic brown sugar
1 1/2 tsp aluminium-free baking powder
1/4 tsp aluminium-free baking soda
1/2 tsp xanthan gum (buy here)
1 tsp cinnamon
1/2 tsp sea salt

1. Preheat oven to 350 degrees and line a muffin tin with liners.

2. In a small saucepan melt butter, then let cool to room temperature.
In a medium bowl whisk eggs, vanilla, and banana. Add butter

3.and stir. Set aside.

4.In large bowl combine flour, sugar, baking powder & soda, cinnamon, salt and xanthan gum.

5. Gently fold strawberries into flour, making sure to coat all sides with flour. This will ensure they don't settle to the bottom of the batter.

6. Add wet ingredients to dry slowly and only stir until mixed.   over mixing with make them too chewy.

7. Bake at 350 for 20-25 minutes or until a toothpick comes out clean.

Enjoy this for breakfast on the go or a snack anytime. Even add some whipped cream for a dessert. Yum yum!
